BOOK OF NOMAD | LINKS WITH LYNX
Meads have such a distinct history that we believe it deserves exploration. We opted for a traditional Nordic Kviek yeast and berries to kick start the fermentation. Kviek yeast is known for its fruity and honey-like flavors, complementing the wildflower honey and berries later blended in. Nordic cuisine and beverages have a long history of using herbs, roots, and spices. Pulling inspiration from history, we used similar ingredients that were available in the old world and blended them into our new world cider our traditional wild yeast fermented cider, and then canned.
NATIVE | FRENCH VACATION
A Made with Hudson Valley Apples, Normandy Cider Apples, HV Native Yeast, and Bacteria, this Normandy and Hudson Valley Spontaneous Cider clocks in at 6.9% abv. Hudson Valley native cider apples, yeast, and bacteria take a spontaneous vacation to Normandy, France's high tannin cider apple region. Aged in oak for 10 months, this co-fermented melange of wild fermented cider represents a unique pairing of Hudson Valley terroir on holiday for a classic French tradition.
